Date Nut Balls

Ingredients

2 eggs, beaten
3/4 cup sugar
1/2 cup (1 stick) oleo or margarine
1 cup nuts
1 package (8 ounce) dates, chopped fine
1 teaspoon vanilla
2 cups cereal such as Rice Krispies
coconut, nuts, powdered sugar in which to roll balls

Directions

  1. Beat eggs, add sugar and beat well, set aside.

  2. Melt oleo in saucepan or skillet.

  3. Pour in egg mixture and chopped dates.

  4. Stir and cook until mixture thickens and turns brown (3-5 minutes after mixture boils).

  5. Add vanilla.

  6. Remove from heat, add Rice Krispies and nuts. Cool slightly.

  7. Make into small balls or into two long rolls.

  8. Roll in coconut, nuts and powdered sugar.

  9. Place in refrigerator to harden.


If made into long rolls they will keep indefinitely and can be sliced as needed.
