Pumpkin Cookies

Ingredients

1/2 cup soft shortening
1 1/4 cups brown sugar
2 eggs
1 1/2 cups strained pumpkin
2 1/2 cups sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger
1/2 teaspoon nutmeg
1 cup chopped nuts
1 cup raisins

Directions

  1. Preheat oven to 400 degrees.

  2. Grease cookie pans.

  3. Cream shortening. Add sugar and eggs one at a time. Add pumpkin. Stir in dry ingredients.

  4. Gradually stir in nuts and raisins.

  5. Drop on greased cookie sheet.

  6. Bake for12 to 15 minutes.
