Cherry Cheesecake Cups

Makes 12 cakes  •  From the kitchen of Nicholas

Ingredients

2 (8 ounce) packages Philadelphia cream cheese, softened
3/4 cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
12 vanilla wafers
1 can cherry pie filling

Directions

  1. Preheat oven to 345 degrees.

  2. Mix cream cheese, sugar, eggs, lemon juice, and vanilla extract together.

  3. Beat until fluffy.

  4. Line baking cups with vanilla wafers.

  5. Put cheese mixture into the paper cups.

  6. Bake 12-15 minutes.

  7. Cool. Top with cherries.
