From the kitchen of Steven Baber and Nanny
1 box white cake mix, plus ingredients to prepare
1 small can crushed pineapple, drained
1 can white icing
1 large bag shredded coconut
Preheat oven to 350 degrees.
Prepare cake according to directions on box.
Pour into 2 9-inch round cake pans.
Bake for 28-30 minutes.
Cool on wire racks.
Drain pineapple well - then put on top of one layer - then put some of icing on top of pineapple.
Put the two layers together. Use remaining frosting all over the cake -- then cover entirely with coconut.
