From the kitchen of Caroline Hurst
1 1/4 cups honey
1 cup oil
2 teaspoons instant coffee
1/2 cup + 2 tablespoons boiling water (dissolve coffee in this)
1 1/4 cups dark brown sugar
4 eggs
4 cups self-rising flour
1+ teaspoon cinnamon
1+ teaspoon mixed spice
1 teaspoon ginger
1 teaspoon bicarbonate soda
Preheat oven to 325 degrees.
Beat together the honey, oil, coffee and sugar.
Beat in the eggs and then the rest of the ingredients sifted together.
Bake 1 hour.
Cake is done when toothpick inserted in center removes clean.
