1 1/4 cup honey
1 cup oil
2 teaspoons instant coffee
1/2 cup + 2 tablespoons boiling water (dissolve coffee in this)
1 1/4 cups dark brown sugar
4 eggs
4 cups self rising flour
1+ teaspoon cinnamon
1+ teaspoon mixed spice
1 teaspoon ginger
1 teaspoon bicarbonate soda
Beat together the honey, oil, coffee and sugar. Beat in the eggs and then the rest of the ingredients sifted together. Bake in greased, shallow tin 12x10x3 at 325 degrees for 1 hour. Cake is done when toothpick inserted in center removes clean.
