Coconut Cookies

Makes 3-4 dozen  •  From the kitchen of Alicia

Ingredients

1 cup butter or shortening
2 cups brown sugar
2 eggs
3 1/4 cup flour
2 teaspoons cream of tartar
2 teaspoons baking soda
1 cup coconut

Directions

  1. Heat oven to 350 degrees.

  2. Cream shortening and sugar. Add eggs and beat well.

  3. Sift flour, cream of tarter, and baking soda. Add to cream mixture; blend well.

  4. Add coconut. The mixture will be very thick.

  5. Form into balls the size of a walnut.

  6. Place on a greased cookie sheet and flatten with a fork.

  7. Bake for 9-10 minutes.
