Banana Chocolate Chip Muffins

Makes 12 (or 8 jumbo)

1/2 cup shortening
1 cup sugar
1 egg slightly beaten
1/2 cup - 1 small bag Chocolate Chips
1 tsp. baking soda
2 tbsp. hot water
1/2 tsp. Salt
1 1/2 cup flour
1 banana


Cream shortening and sugar together. Blend in egg and mashed banana. Dissolve soda in hot water. Add to creamed mixture. Combine dry ingredients and chocolate chips. Stir into creamed ingredients until just blended. Pour into greased muffin tins and bake at 375 degrees for 20 mins.
