Apple Bread

Makes 2 loaves

2 cups Sugar
1 cup Oil
3 Eggs
3 cups All-Purpose Flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Cinnamon
2 teaspoons Vanilla Extract
2 cups Chopped Peeled Apples
1 cup Nuts


Grease 2 loaf pans. In a large bowl beat together the sugar, oil, and eggs. In a seperate bowl sift together the flour, salt, baking soda, and cinnamon. Add the dry ingredients to the sugar mixture. Add the vanilla, apples, and nuts. Pour the batter into the prepared pans. Bake in 325 degrees oven for 1 hour.
