Chocolate Oatmeal Cookies

Makes 5 1/2 dozen  •  From the kitchen of Brittany Ruffin

Ingredients

1 1/2 cups sugar
1 cup margarine or butter, softened
1 egg
1/4 cup water
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/3 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups quick-cooking oats
6 ounces semi-sweet chocolate chips

Directions

  1. Heat oven to 350.

  2. Mix sugar, margarine, egg, water and vanilla.

  3. Stir in remaining ingredients.

  4. Drop dough by rounded tsp about 2 inches apart onto ungreased cookie sheet.

  5. Bake until almost no indentation remains when touched,10 to 12 minutes.

  6. Remove immediately from cookie sheet.
