Makes 12 muffins • From the kitchen of Britni J. Edwards
small pat margarine
2 apples
1 cup white flour
1 cup whole wheat pastry flour
4 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons sugar
1/2 teaspoon cinnamon
1 egg
1 cup milk
1/4 cup (1/2 stick) butter
Preheat the oven to 350 degrees.
Grease a 12 cup muffin pan.
Peel and chop the apples.
In a bowl, mix together the flour, baking powder, salt, two tablespoons of sugar, and the cinnamon.
In another mixing bowl, beat the egg with the milk.
In the small pan, melt the butter over low heat.
In the third bowl, mix the apples with the melted butter and the remaining two tablespoons of sugar.
Add the milk mixture to the flour mixture to make a batter.(mix well)
Stir in the apples.
Spoon the batter into the muffin pan. Fill each cup two-thirds full.
Bake for 35 minutes.
Let the muffins cool for five to ten minutes. Then with the potholders, turn them out of the pan and put them on a wire rack to cool.
