Apple Muffins

Makes twelve

small pat margarine
two apples
one cup white flour
one cup whole-wheat pastry flour
four teaspoons baking powder
1/2 teaspoon salt
four tablespoons sugar
1/2 teaspoon cinnamon
one egg
one cup milk
1/2 stick butter


Make sure you have ready a twelve-cup muffin pan, a small knife, cutting board, three mixing bowls, measuring cups and spoons, a mixing spoon, eggbeater or fork, potholders, and a wire rack. 1.Preheat the oven to 350 degrees. 2.Grease the muffin pan. 3.Peel and chop the apples. 4.In a bowl, mix together the flour, bakingpowder, salt, two tablespoons of sugar, and the cinnamon. 5.In another mixing bowl, beat the egg with the milk. 6.In the small pan, melt the butter over low heat. 7.In the third bowl, mix the apples with the melted butter and the remaining two tablespoons of sugar. 8.Add the milk mixture to the flour mixture tomake a batter.(mix well) 9.Stir in the apples. 10.Spoon the batter into the muffin pan. Fill each cup two-thirds full. 11.Bake for thirty-five minutes. 12.Let the muffins cool for five to ten minutes. Then with the potholders, turn them out of the pan and put them on a wire rack to cool.
