Mrs. Claus' Christmas & Holiday Pies - Recipe for Lemon Lush

Lemon Lush

Ingredients

1 1/2 cups flour
1/4 cup finely chopped walnuts
3/4 cup or 1 1/2 cubes soft butter or margarine
1 package (8 ounce) cream cheese
1 teaspoon vanilla
1 cup powdered sugar
1 container (8 ounce) Cool Whip
2 (3 1/2 ounce) boxes instant lemon pudding
3 cups cold milk

Directions

  1. Preheat oven to 350 degrees.


Crust:

  1. Mix flour, walnuts, and butter or margarine.

  2. Spread into a 13x9 inch pan.

  3. Bake for 20-30 minutes.

  4. Cool.


Second Layer:

  1. Mix warmed cream cheese, vanilla, powdered sugar and 1 cup Cool Whip.

  2. Beat well and spread over crust.

  3. Refrigerate for 1 hour.


Third Layer:

  1. Mix instant pudding with milk.

  2. Mix until completely dissolved and spread over 2nd layer.

  3. Top with the remaining Cool Whip.

  4. Chill.
