Homemade Noodles

Makes 3 cups cooked noodles • From the kitchen of Claire Collom

Ingredients

1 egg, beaten
2 tablespoons milk
1/2 teaspoon salt
1 cup sifted all-purpose flour

Directions

  1. Combine egg, milk and salt. Add enough sifted flour to make dough stiff, about 1 cup.

  2. Roll very thin on floured surface; let stand 20 minutes.

  3. Roll up loosely; slice 1/4 inch wide; unroll, spread out and let dry for 2 hours. (if desired, store in container until needed.)

  4. Drop into boiling soup or boiling salted water and cook, uncovered about 10 minutes.
