Orange Scones

Makes 10

From the kitchen of Brianna



1/4 teaspoon salt
1/3 cup sugar
3 tablespoons chilled stick margarine, cut into small pieces
1 (8-ounce) carton lemon low-fat yogurt
2 cups all-purpose flour
2 teaspoons grated orange rind
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup unsweetened orange juice
1 tablespoon sugar


Combine the first 5 ingredients in bowl; cut margarine with a pastry blender until mixture resembles coarse meal. Add yogurt, orange rind, and orange juice to first 5 ingredients, stirring just until moistened. (Dough will be sticky) with floured hands, pet dough into a 9in. Circle on a baking sheet coated with Vegetable cooking spray. Cut into 10 wedges, cutting into but not through dough. Sprinkle with 1 tablespoon sugar. Bake at 400 for 16 minutes or until golden.
