Chocolate-Buttermilk Bread

Makes 1 loaf

From the kitchen of Constance

1 cup sugar
1/2 cup (one stick) softened butter (To soften the butter, take it out of the refrigerator at least one hour before using.)
2 eggs
1 cup buttermilk
1 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Get a grownup to preheat the oven to 350 degrees Fahrenheit. Grease the bottom of a 9 by 5-inch loaf pan. (You can also use a cooking spray.) Put the sugar and the butter in a large bowl and mix well by hand(or with a mixer.) Add the eggs and beat together well. Then stir in the buttermilk. Add the flour, the cocoa, the baking powder, the baking soda and the salt. Stir until dry ingredients are just moistened. Put the batter in the loaf pan. Bake at 350 degrees Fahrenheit for 55 to 65 minutes. (It's done when a toothpick inserted into the center comes out clean!) Cool for 15 minutes. Slice and serve. The bread is great with strawberry or cherry preserves or raspberry jam.
