Banana Chocolate Chip Muffins
Makes 12 (or 8 jumbo) muffins • From the kitchen of Emily Dickinson
Ingredients
1/2 cup shortening
1 cup sugar
1 egg, slightly beaten
1/2 cup chocolate chips
1 teaspoon baking soda
2 tablespoons hot water
1/2 teaspoon salt
1 1/2 cups flour
1 banana
Directions
Preheat oven to 375 degrees F.
Grease muffin tins.
Cream shortening and sugar together.
Blend in egg and mashed banana.
Dissolve soda in hot water. Add to creamed mixture.
Combine dry ingredients and chocolate chips.
Stir into creamed ingredients until just blended.
Pour into prepared muffin tins and bake for 20 minutes.
