Spinach Loaf

Ingredients

10 ounces frozen chopped spinach (thawed and drained)
2 eggs, slightly beaten
1 can (8 3/4 ounce) cream style corn
1/2 cup melted butter
1/4 teaspoon salt
1 box (8 1/2 ounces) corn muffin mix
1/2 cup shredded cheese
1 cup sour cream

Directions

  1. Preheat oven to 350 degrees.

  2. Grease an 8 inch baking dish.

  3. Combine in large bowl beaten eggs, spinach, corn, sour cream, butter and salt.

  4. Mix well and add muffin mix. Stir again.

  5. Pour into a prepared baking dish.

  6. Bake for 30 minutes.

  7. Sprinkle top with cheese, serve warm.
