Recipe Details

Ingredients

2 cups unsifted flour
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 cup oil
3 eggs
2 cups white sugar
3 teaspoons vanilla
2 cups grated zucchini
1 cup nuts (optional)

Directions

  1. Preheat oven to 350 degrees.

  2. Grease and flour 2 loaf pans.

  3. Measure flour, salt, baking powder, baking soda and cinnamon in one bowl and mix together.

  4. In a separate bowl, mix together oil, eggs, sugar and vanilla. Add dry ingredients and mix well.

  5. Fold in zucchini and nuts.

  6. Pour into loaf pans.

  7. Bake for 1 hour.


Note: Bread is more moist if zucchini is frozen and thawed first.

Great recipe. Used it for regular and mini loaves. Had a lot of zucchini from the garden, so made lots of bread and froze it. Everyone loves it.

Good, moist bread. I added some spices to mine like cinnamon. When you grate your Zucchini, don't drain it.
