Raisin Sour Cream Pie

Makes 1 pie •  From the kitchen of Gigi in Canada

Ingredients

baked 8" pie shell
3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon cloves
2 eggs (separated)
1 cup dairy sour cream
1 cup seedless raisins
1 to 1 1/4 teaspoon lemon juice
1/2 cup chopped walnuts (optional)
meringue 2 egg whites (beaten on high until peaks)

Directions

Combine sugar, cornstarch, salt and spices. Blend in egg yolks. Add sour cream, raisins and lemon juice. Cook over medium heat, stirring constantly, until mixture thickens. Cool, then stir in walnuts, pour into pie shell and top with merignue. Bake in 350 degree oven for about 15 minutes or until meringue is browned.
