Fluffy Pumpkin Cheesecake

Makes 8 servings • From the kitchen of Chelsea

Ingredients

1 Ready Crust graham cracker crust (6 ounce)
1 package (12 ounce) cream cheese, softened*
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1 cup 100% pure pumpkin
2 eggs

Directions

  1. Preheat oven to 350 degrees.

  2. Mix cream cheese, sugar and pumpkin pie spice on medium speed. Stir in pumpkin.

  3. Add eggs and mix until blended. Pour into crust

  4. Bake for 40 minutes.

  5. Cool.

  6. Refrigerate for 3 hours or overnight.


Helpful Hints: Soften cream cheese in microwave on high for 15 to 20 seconds.
