Cranberry Coffeecake

Ingredients

8 ounces cream cheese, softened
1 cup butter
1 1/2 cups sugar
1 1/2 teaspoons vanilla
4 eggs
2 1/4 cups flour
1 1/2 teaspoons baking powder
2 cups fresh cranberries
1/2 cup chopped nuts
a dusting of confectioner's sugar

Directions

  1. Preheat oven to 350 degrees.

  2. Grease and flour tube pan.

  3. Thoroughly cream together: cream cheese, butter, sugar and vanilla.

  4. Add eggs one at a time, mixing well after each addition.

  5. Gradually add 2 cups flour and baking powder.

  6. Combine remaining 1/4 cup flour with cranberries and nuts and fold into batter.

  7. Pour into pan.

  8. Bake for 1 hour and 15 minutes.

  9. Let stand for 5 minutes before removing from pan. Dust with confectioner's sugar.
