Southern Coconut Pie
Makes 12-16 servings • From the kitchen of Dawn Spivey
Ingredients
2 cups sugar
1/2 cup margarine, melted
4 eggs
2 1/2 tablespoons flour
1 cup milk
2 1/3 cups coconut
2 1/2 teaspoons vanilla
2 unbaked pie shells
Directions
Preheat oven to 450 degrees.
Mix together sugar, margarine, eggs, flout and milk. Add coconut and vanilla.
Divide mixture evenly among the unbaked pie shells.
Bake in 450 degree oven for about 10 minutes.
Reduce heat to 375 degrees and continue baking about 25 minutes or until filling is set.
Cool on wire racks.
