Bread Pudding
Makes 8 to 10 servings • From the kitchen of Patricia Stephens
Ingredients
4 eggs
1 3/4 cups sugar
1/2 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup (1 stick) butter, softened
4 cups eggnog (quart of store bought)
10-12 day old buttermilk biscuits
3/4 cup raisins (optional)
Directions
Preheat the oven to 350 F.
In a large bowl beat the eggs until frothy.
Add the sugar, nutmeg, vanilla, and cinnamon. Mix well.
Add butter and eggnog.
Beat well.
Crumble the biscuits fine and add to mixture
Add raisins. Mix well.
Pour into an ungreased 13x9x2 pan.
Bake for 40 to 45 minutes, or until lightly brown.
