Raisin Cream Pie
Makes 1 • From the kitchen of Tonica
Ingredients
1 cup Raisins
1 cup Water
1 Tablespoon Flour
1/2 cup or less Sugar
2 Egg Yolks
1 cup Cream
2 Egg Whites
2 Tablespoons Sugar
1/8 Teaspoon Cream of Tartar
Directions
RAISIN CREAM PIE Boil 1 cup of raisins in 1 cup of water for 5 minutes or until plump. MIX 1 tablespoon of flour, 1/2 cup or less of sugar, 2 egg yolks, pinch of salt (optional), 1 cup of cream, ADD to the raisins when thick. Put in pie shell (deep dish). WHIP 2 egg whites - quite stiff. ADD 2 tablespoons of sugar, 1/8 teaspoon of cream of tartar. SPREAD ON HOT RAISIN MIXTURE. BAKE UNTIL BROWN 5 - 8 MINUTES.
