Mandarin Orange Jell-O Salad

This is one of our family's favorite holiday recipe.
Gluten‑free, Good for parties/potlucks, Kid friendly
1 cup boiling water
1 package apricot Jell-O
2 containers Cool Whip
16 ounces sour cream
medium can crushed pineapple
small can mandarin oranges
Grease favorite mold lightly with mayonnaise to help with unmolding later.
In large bowl, dissolve 1 package of apricot Jell-O with 1 cup of boiling water.
To the Jell-O/water mixture add two softened regular size containers of Cool-Whip and one 16 oz container of sour cream.
Add a medium size can of crushed pineapple (I add the juice here) and 1 small can of mandarin oranges (I drain most of the juice, except for about 1/4 cup).
Mix well with large spoon until light orange in color. Pour into mold.
I suggest putting remainder in a smaller mold or bowl to serve with leftovers.
