Stir & Drop Sugar Cookies

2/3 cup oil
2 teaspoons vanilla
1 teaspoon grated lemon rind
3/4 cup sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
Preheat oven to 400 degrees.
Beat eggs and stir in oil, vanilla and lemon.
Blend in sugar and beat until thick. Add dry ingredients.
Drop 2 inches apart on ungreased cookie sheet.
Flatten with glass dipped in oil and sugar.
Bake for 8-10 minutes.
First made these sugar cookies in home ec class in high school. Super easy and quick and are light and delicious.
