Ingredients

7 ounces almond paste (cut into small pieces)
1/3 cup sugar
2 egg whites
1/2 teaspoon vanilla
3 tablespoons all-purpose flour
1/2 cup pine nuts

Directions

  1. Preheat oven to 325 degrees.

  2. Line baking sheets with parchment paper.

  3. Beat together almond paste, sugar, and 1 egg white in medium-size bowl until smooth.

  4. Beat in second egg white, then vanilla extract.

  5. Stir in flour until dough forms.

  6. Drop batter by teaspoonfuls 2 inches apart on prepared sheets.

  7. Cover each cookie with pine nuts, about 1/2 teaspoon each.

  8. Bake in top third of oven until edges are golden, about 15 minutes.

  9. Cool cookies on sheet on cooling rack.
