Coconut Buns

Makes 12

From the kitchen of Maria



200 grams Flour
75 grams Margarine
1/8 teaspoon Salt
1 teaspoon Baking Powder
75 grams Castor Sugar
1 Egg
50 grams Coconut
3-4 tablespoons Milk
2 tablespoons Jam
2-3 tablespoons Coconut


1. Sieve flour, salt, and baking powder into a bowl. 2. Rub in margarine. Stir in sugar and coconut and mix well. 3. Beat egg in a bowl, add a little milk and pour into the centre of mixture, adding enough milk to make a fairly stiff dough. 4. Using two forks pile into 10-12 greased party tins. 5. Bake in a fairly hot oven 215 degrees C or gas mark 6 for about 20 minutes. 6. Place the jam and coconut on two plates, insert the top of the cooked buns into the jam and then cover jam with coconut. ENJOY EATING THEM.
