Chocolate Surprise

Makes 1 full cake

From the kitchen of Hannah



200g Self raising flour
225g caster sugar
1/2 tea spoon salt
25g cocoa powder, sieved
100g margarine
2 medium eggs
5 table spoons evaporated milk
5 table spoons water
few drops vanilla essence
60g margarine
1 table spoons cocoa powder
250g sieved icing sugar
3 table spoons hot milk
1 table spoons vanilla essence


heat ovento 180c,350f,gas mark 4.Grease2 x 20.5 cm (8inch) tins,not loose-bottomed as the mixture would not run out. Mix flour,sugar,salt and cocoa. Rub in margarine .Beat eggs with milk. Stir egg mixture,essence and liquids into dry ingredients and beat well. Place mixture in prepared tins and bake for about 30-35 minutes. When cold sandwich and top with milk chocolate icing. Milk Choclate Icing . Melt margarine, blending in cocoa ,then stir in icing sugar , milk and essence.
