Macaroni Salad
Makes 8 to 10 servings • From the kitchen of Ashleigh
Ingredients
1 package (8 ounce) macaroni
1 cup diced cucumber
1/2 cup diced green pepper
1/4 cup sweet pickle relish
1 tablespoon grated onion
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup milk
1 1/4 teaspoons salt
dash black pepper
2 hard-boiled eggs, chopped
Directions
Cook macaroni as directed on label. Drain, rinse with cold water.
Place in large bowl. Add cucumber, green pepper, pickle relish, onion, mayonnaise, sour cream, milk, salt and pepper.
Blend well, pour over macaroni mixture.
Toss until macaroni is well coated.
Gently mix in chopped egg.
Refrigerate covered until well chilled, preferably over night.
