Ingredients

1 egg white
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 1/2 cups finely chopped pecans

Directions

  1. Preheat oven to 225 degrees.

  2. Beat egg white until foamy. Gradually add sugar, 2 tablespoons at a time, beating until stiff peaks form.

  3. Fold in vanilla and pecans.

  4. Drop by heaping teaspoons 3 inches apart onto ungreased cookie sheets.

  5. Bake for 1 1/2 hours.

  6. Turn oven off; cool candies in oven for at least 1 hour.

  7. Do not open oven door.

  8. Remove from cookie sheets.

  9. Serve immediately or store in airtight containers.
