1/2 cup granulated white sugar
1/2 cup packed brown sugar
3 1/2 teaspoons baking powder

3 tablespoons vegetable oil
1/3 cup milk
1 egg
3 mashed bananas
1 cup nuts, chopped

Directions

  1. Heat oven to 350 degrees.

  2. Grease bottom only of loaf pan 9x5x3inches, or 2 small loaf pans.

  3. Add all ingredients together; beat 30 seconds to 1 minute.

  4. Pour into pans.

  5. Bake 60-65 minutes, or until you can insert a toothpick in the middle and it comes out clean.

Note: If using self-rising flour omit baking powder and salt. Use slightly brown bananas. Nuts are optional, but if you want nuts, I recommend walnuts.

Yummy! I added vanilla extract and used melted cocoa butter in place of vegetable oil. Delicious!
