Haley's Special Strawberry Bread

Dairy‑free, Good for parties/potlucks, Kid friendly, Travels well
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon ground cinnamon
2 cups sugar
1 cup vegetable oil
3 eggs, beaten
1 cup slightly chopped nuts (optional)
2 (10 ounce) packages frozen sliced strawberries, thawed
Preheat oven to 350 degrees.
Combine eggs, oil and strawberries in mixing bowl.
Slowly add flour, salt, sugar, baking soda, cinnamon. Mix well.
Add nuts (remember this is optional).
Pour batter into 2 greased and floured 9x5x3" loaf pans.
Bake for 1 hour or until toothpick inserted in the center comes out clean.
Note: This freezes very well.
I can't believe this bread does not have a review!!! It is sooooo good. I have made this for friends and family every Christmas for the past 6 years. It is very moist and has a delicious flavor. Not too overpowering with strawberry....just right. We love it and everyone we make it for asks for it again!!
