Ingredients

1 1/2 cups brown sugar, firmly packed
2/3 cup oil
1 egg
1 cup sour milk (or buttermilk)
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 cups diced apples
1/2 cup chopped pecans

Directions

  1. Preheat oven to 325 degrees.

  2. Line muffin tins with paper baking cups.

  3. Combine the following in a bowl: brown sugar, oil, and egg.

  4. In another bowl combine: milk, baking soda, salt and vanilla.

  5. Add milk mixture to sugar mixture, alternately with flour, beating well after each addition.

  6. Fold in apples and pecans.

  7. Spoon into prepared pan.

  8. Bake until cooked through, about 20 minutes.
