This lemon cheesecake is perfect for after a Christmas dinner. It gets everybody in that festive Christmas spirit!!

200g soft butter
400g digestive biscuits
500g cream cheese
250g caster sugar
1-2 tsp of vanilla extract
Juice of 1 lemon
Zest of 1 lemon
1-2 drops of yellow food colouring (optional)
Start with crushing the biscuits with a rolling pin until fine crumbs. In a saucepan or microwave melt the butter.
Stir the butter and biscuits together and pour into a cheesecake tin and spread out.
In another bowl mix the cream cheese and sugar until well combined. Add in the vanilla and the lemon juice and zest. When well mixed add in food colouring (if using).
Pour the cheese mix on top of the biscuit mix in the tin and spread out evenly.
Put into the fridge for 1 hour or until it is stiff enough to cut into. Maybe even decorate with a piece of lemon on top. Enjoy!!
