X-mas Fruit Cake Delight

Ingredients

3 1/2 cups plain flour
500 grams brown sugar
1.5 kilograms mixed fruit
500 grams butter
10 eggs
1 teaspoon baking powder
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon nutmeg
1 tablespoon treacle
1 teaspoon vanilla, lemon, almond and coffee essences
1 Gill rum (approximately large wine glass)

Directions

  1. Soak fruit in rum, essences and treacle up to a week.

  2. Beat butter and sugar to a cream. Add eggs one at a time.

  3. Add flour and other dry ingredients.

  4. Add fruit. Bake in a very slow oven for 3 to 4 hours.
