Lear’s Easy Cheesecake

My teacher made us make this in class. It was such a hit I brought it home. We like it so much that we have never taken the time to put pie filling on the top of it.

8 oz softened cream cheese
1/3 to 1/2 cup sugar
1 cup sour cream
1 tsp vanilla
8 oz Cool Whip
2 graham cracker pie crusts or 1 8x8 pan
Mix cream cheese until softened.
Add sugar, sour cream and vanilla. Mix until creamy.
Fold in Cool Whip (gently). Spoon into graham cracker crust and cover with plastic wrap. Chill 2–3 hours.
May top with pie filling, if desired.
Notes: I have used 1/3 cup sugar. All of the other ingredients have been fat free. The taste was very refreshing. It never was around long enough to spoil.
