If you have a large family I recommend tripling the recipe as the cookies must be on the large side in order to hold the life-saver.

Ingredients

2/3 cup shortening
3/4 cup sugar
1 teaspoon vanilla
1 egg
2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt (optional)
4 rolls multi-colored Life Savers candies

Directions

  1. When ready to bake, preheat oven to 375 degrees and line cookie pans with parchment paper.

  2. Thoroughly cream shortening, sugar and vanilla.  Add egg; beat until fluffy.

  3. Sift together flour, baking powder and salt; blend into creamed mixture.

  4. Divide dough in half.  Chill for 1 hour.

  5. On lightly floured surface; roll dough 1/8 inch thick.

  6. Cut into desired shapes with cookie cutters.

  7. Cut Life-Saver sized hole in centre of cookie, place a life-saver in the centre of each cookie.

  8. Bake for 6-10 minutes.

  9. Cool slightly, remove cookies from pan.
