Ingredients

1 cup butter
1/2 cup almond paste
1 whole egg
1/2 cup brown sugar
2 cups flour
1/2 teaspoon salt
1 cup raspberry jam
3 egg whites
3/4 cups sugar
1/2 cup coconut

Directions

  1. Preheat oven to 325 degrees.

  2. Cream together butter, almond paste, whole egg and brown sugar.

  3. Mix in flour and salt until crumbly.

  4. Press dough into a 9x12 baking dish.

  5. Bake for 20 minutes.

  6. Remove from oven.

  7. Spread with the jam.

  8. Beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form. Fold in coconut.

  9. Spread meringue over jam.

  10. Bake another 20 minutes.

  11. Cool before cutting.
