Mrs. Claus' Christmas & Holiday Cookies - Recipe for Gooey Chocolate Brownies

Gooey Chocolate Brownies

Makes 24 servings • From the kitchen of Charlotte Evans

Ingredients

180g butter, melted
165g caster sugar
150g soft brown sugar
3 eggs
75g plain flour
50g self-rising flour
40g cocoa powder
2 teaspoons icing sugar (optional)

Directions

  1. Grease 19cm x 29cm slice pan; line with baking paper or butter.

  2. Whisk butter and sugars in large bowl until combined.

  3. Whisk in eggs 1 at a time, whisking well after each.

  4. Whisk in sifted flours and cocoa and pour into prepared tray.

  5. Bake in moderate oven for 15 minutes.

  6. Cover with foil and cook for a further 45 minutes.

  7. Cut into small rectangles and leave to cool for 8 minutes.

  8. Sprinkle with icing sugar (optional)
