Mrs. Claus' Christmas & Holiday Cookies - Recipe for Coconut Macaroons

Coconut Macaroons

Makes 20 to 24 cookies • From the kitchen of Loretta

Ingredients

2 egg whites
1/2 teaspoon vanilla and a dash of salt
1/2 cup sugar
1 1/3 cups flaked coconut

Directions

  1. Preheat oven to 325 degrees.

  2. Grease a cookie sheet.

  3. Beat egg whites, vanilla, and salt till soft peaks form.

  4. Gradually add sugar, beating till stiff peaks form; fold in coconut.

  5. Drop from one teaspoon 1 1/2 inches apart onto a greased cookie sheet.

  6. Bake about 20 minutes.

  7. Cool on a wire rack and enjoy.
