Twisted Monster Cookies

I have to eat gluten-free so created this recipe using coconut flour because coconut flour is a great source of fiber.

1/2 cup butter
1 cup white sugar
1 cup brown sugar
12 oz. (340gm.) peanut butter
3/4 tsp. vanilla
2 tsp. baking soda
3/4 cup sifted coconut flour
1-1/2 cup coconut
1/2 cup mini-chocolate chips and/or mini M&Ms, can use seasonal colors
Mix ingredients in order listed. Shape into balls and place on ungreased cookie sheets.
Bake in a 350 degree preheated oven for 10-12 minutes.
