Ingredients

1/2 pint water
4 ounces white sugar
2 eggs, beaten
1/2 pound plain flour
1 tablespoon mixed spice
1 tablespoon cinnamon
1 teaspoon bicarbonate soda
1/2 pound margarine/butter
1/2 pound sultana
1/2 pound raisins
1 tablespoon treacle

Directions

  1. Into a large pan, mix water, spice, cinnamon, fruit, sugar, margarine, treacle.

  2. Bring to a boil then simmer for 1 minute only.

  3. Stir in flour, baking soda, and eggs  Mix very well.

  4. Put the mixture into a pudding basin line with enough cling wrap to go over the sides.

  5. Do not cover the mixture.

  6. Microwave for 6-9 minutes.

  7. When cooked, keep in wrap, or remove the wrap if you do not want the skin to form on the pudding.
