Mrs. Claus' Christmas & Holiday Cakes - Recipe for Mini Fruitcakes

Mini Fruitcakes

Makes 3 dozen • From the kitchen of Dora Grimm

Ingredients

3 eggs, well beaten
1 can (14 ounce) sweetened condensed milk
1 jar (28 ounce) mincemeat
1 cup nuts, chopped
2 cups cornflakes crumbs
1/2 cup regular all-purpose flour
1 teaspoon baking soda
36 candied cherries, halved

Directions

  1. Preheat oven to 300 degrees.

  2. Line cupcake pans with paper liners.

  3. In large bowl, combine all ingredients except cherries.

  4. Spoon batter evenly into lined pans.

  5. Top each with a cherry half.

  6. Bake for 25 to 30 minutes.

  7. Cool.
