Queen's Cake

Makes 12

From the kitchen of Cheri McElroy



1/2 cup Crisco
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup sugar
2 eggs unbeaten
2 cups sifted cake flour
2 1/2 teaspoons baking powder
3/4 cup milk
Frosting: 2 cups confectioner's sugar
light cream
dash of salt
1 teaspoon vanilla extract


Cake directions: combine shortening, salt, and vanilla extract. Add sugar gradually and cream until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Sift flour and baking powder together three times. Add small amount of flour to creamed mixture alternately with milk, beating after each addition until smooth. Pour batter into two greased 8" layer pans or a bundt pan. Bake in a moderate oven 375 degrees for 25 minutes, bundt pan 45 minutes at 350 degrees. Frosting directions: Sift confectioner's sugar. Add light cream to reach frosting consistency. Add a dash of salt and vanilla extract.
