Carrot Tea Bread

3 eggs
1 1/2 cups sugar
3/4 cups vegetable oil
2 3/4 cups sifted all purpose flour
1 3/4 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon ground cinnamon
1 1/2 cups finely shredded carrots


Grease a loaf pan. Line bottom with wax paper; grease. Beat eggs, sugar and vegetable oil in large mixing bowl until well blended. Sift flour, baking powder, soda, salt, and cinnamon on to waxed paper; stir into egg mixture. Stir in carrots. Turn into prepared pan. Bake at 325 degrees for 1 hour and 20 minutes, or until center springs back when lightly touched. Cool for 10 minutes in pan on wire rack. Peel off waxed paper and cool completely.
