Stir & Drop Sugar Cookies

Ingredients

2 eggs
2/3 cup oil
2 teaspoons vanilla
1 teaspoon grated lemon rind
3/4 cup sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Directions

  1. Preheat oven to 400 degrees.

  2. Beat eggs and stir in oil, vanilla and lemon.

  3. Blend in sugar and beat until thick. Add dry ingredients.

  4. Drop 2 inches apart on ungreased cookie sheet.

  5. Flatten with glass dipped in oil and sugar.

  6. Bake for 8-10 minutes.
