Ingredients

1 1/2 cups self-rising flour
1/4 teaspoon salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1/4 cup plus 2 teaspoons of sugar
1 large egg
1 cup creamy peanut butter
1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees.

  2. Mix flour and salt together in a large bowl.

  3. Cream the butter, brown sugar, and sugar in a separate bowl. Add egg, peanut butter and vanilla, beat together. Add flour to mixture, beat until a well mixed.

  4. Roll into small balls in your hands, then place on oven tray.

  5. Flatten cookie with fork or base of glass.

  6. Bake in oven for 10 minutes.

This recipe creates dough in such a consistency as to make a good thin or thick treat. I placed chocolate covered caramel dove candy in the center for a simple accent. Not super sweet either. Overall, I like the recipe. LittlesDebbie
