Mrs. Claus' Christmas & Holiday Cakes - Recipe for Honey Cake

Honey Cake

From the kitchen of Caroline Hurst

Ingredients

1 1/4 cups honey
1 cup oil
2 teaspoons instant coffee
1/2 cup + 2 tablespoons boiling water (dissolve coffee in this)
1 1/4 cups dark brown sugar
4 eggs
4 cups self-rising flour
1+ teaspoon cinnamon
1+ teaspoon mixed spice
1 teaspoon ginger
1 teaspoon bicarbonate soda

Directions

  1. Preheat oven to 325 degrees.

  2. Beat together the honey, oil, coffee and sugar.

  3. Beat in the eggs and then the rest of the ingredients sifted together.

  4. Bake 1 hour.

  5. Cake is done when toothpick inserted in center removes clean.
